Café Wellington

Ingredients: 1/2 cup cream
1/4 tsp. instant coffee
2 tsp. Coconut Syrup
1 oz. white rum
Coffee
   
Directions: Blend whipping cream with instant coffee until it stands up in stiff peaks. In a heat-proof cup add coconut syrup and a little coffee and stir until syrup is dissolved. Add rum and stir well while filling cup with more coffee. Top with whipped cream.
   
Serves: 1
